Yeah, it has been a while since the menu has made it up. It has been a tough couple of weeks between my job and Michael’s schedule with basketball, so we have been pretty lucky to sit down for dinner at all lately. This week will be just as crazy, since both the Men’s and Women’s team are in playoff games Monday and Tuesday. I am going to do my best to get dinner on the table anyhow.
Mon: Sour Cream Chicken Enchiladas, black beans, and green salad ( Combined a couple of recipes, will share it later in this week, the filling was so good!)
Tue: Creamy Chicken Taquitos and fruit (will be a late night since we will both be at the game, GO BUFFS!)
Wed: Homemade Pizza (Margharita for me, sausage for Michael) Will share this new pizza crust and sauce recipe in the near future, it is working on a slow rise in the fridge right now)
Th: Coconut Chicken with Apricot Sauce over brown rice with green beans (New recipe for Pennies on a Platter, sounds delish!)
Fri: Linguine with Red Sauce (plus sausage for Michael) with salad and some crusty bread
Michael is out of town for the rest of the weekend, so I am pretty sure I will be living on BLT’s. Which reminds me I have to share with you the most incredible bacon ever, I had better get working on that post.
